Dill is one of my absolute favorite herbs. It seems people either love dill or hate it. I am in the "lover" group.

Years ago, I visited a bed and breakfast that was on an herb farm in the country. They served a buffet-style breakfast that incorporated all of the herbs they grew there on the farm along with amazing jellies, etc. This is where I found this dish.

It was creamy, scrambled eggs with a mixture of fresh herbs. I had to ask them what was in these eggs! I continued making them over the years. While all of the herbs are delicious, this rendition has only the dill.

So, to start it out, you will want to go buy a dill plant! Sure, you could go to the spice aisle and grab some dried dill but that would not be near as fun! Go ahead! Buy the plant! There are many dill recipes out there, trust me!

So, if you have read any of my recipes, you know I don't really measure. I estimate how much I should use most times. This recipe is fairly easy so it should be pretty hard to mess up! lol

After you have bought your dill, go get your eggs out of the fridge. For one person, I would grab two. If you are cooking for a family, I would do two eggs per person. 

Go ahead and take out some cream cheese and let it warm up a bit. You will also need heavy whipping cream. Okay, ready? Beat your eggs with a little whipping cream....for two eggs, I would say maybe a tablespoon or two. And when I say "beat your eggs," I mean with a fork....although if you do whip out cake beaters, a food processor or blender, let me know how that goes. I have never tried that with scrambled eggs. The more eggs you are making, add a bit more whipping cream. Also, you are going to add in a tablespoon or so of creamed cheese for two eggs....add a bit more for more eggs. Add a little sea salt and fresh pepper. Beat it until fluffy. 

Oh, what did I forget???? Snip off a bit of fresh dill....wash it! You can cut it up with herb scissors (yes, there is such a thing :-)) or you can use a knife. Add the little pieces to your egg mix. Use as much as you would like. The more "dilly" you want your eggs, the more dill you will want to add.

Now, you need to heat up a little butter in a skillet (cast iron is amazing)! Cook on medium heat scrambling as you go. Don't overcook. Don't turn the heat too high. You want soft eggs that are fluffy.
