If you are wondering what to do with all of those delicious herbs you are growing in your garden, here is an idea. If you are growing rosemary, Gorizia is an excellent choice. It grows large, is very fragrant and does fine in our Texas winters. Just go snip a piece and get started!
Let's make some chops on top of the stove. You can grill them too if you have a fire going. It is best to prep these a night ahead of time. Rinse them and cut into the sides about two inches deep to ensure they will stay flat during cooking. (You are going to want thick chops...at least an inch thick).
Sprinkle each side with salt and pepper and a dash of garlic salt. As I said earlier, it's best to let all that sink in over night in the fridge.
When you are ready to cook them, melt some butter in a skillet with equal amounts of olive oil. Use real butter, ya'll! Toss in three or four cloves of garlic with slices of onion.
Don't forget to add some chopped rosemary picked fresh from the garden!
Let the onions carmelize and then add the chops cooking over medium high heat until cooked through...approximately 6 minutes per side basting the chops continuously with the yummy butter/olive oil concoction. Don't forget to drench them with this when you plate them up as well!
You are going to need some sides. I would recommend baking some yummy organic carrot slices in the oven with some brown sugar on about 350 until tender...about 30-40 minutes. Fresh dill blends really well with these!
I bake them in aluminum foil for easy cleanup.
You can also cook up some cowboy potatoes to go with it. These are very easy. Cut up a few slices of bacon and add some diced onion, garlic and cubed potatoes. Cook until crispy but also tender. You can bell pepper or jalapenos if you would like. Of course, salt and pepper. If it dries out, toss a little olive oil in to finish cooking. :-)
