This is a little simple blog to remind you of a great use of your mint plants. As you can see in the photo, I miraculously cleaned off my outdoor patio table. I wanted this so that I could enjoy meals outside since that is obviously my place of choice. However, it seems to be the catch all for many plants coming and going. 

On this particular day, I was determined to make a delicious breakfast. I did the typical bacon but this was a special edition Wright Brand bacon, and it is yummy. I decided on fried eggs...I've been a fan of these since a little girl. Raised by my grandparents, my granny said I often requested "More yeg, Annie" since I could not pronounce "granny" or "egg" obviously. lol I am very particular about my hashbrowns. Growing up, I don't ever remember eating them. My granny was all about making country fried potatoes with bacon, potatoes, onion, garlic and bell pepper which I still make often. Hashbrowns are tricky and I love them although I don't like frozen ones. When I do make them, I go the extra mile. I shred them by hand and rinse them several times to remove the starch. Then, I squeeze out all the water and get them dry to fry up crispy. 

But all that is seriously just accompaniments to the main deal that I wanted to discuss with you. The star of the show is "pancakes" and there are many things you can do to pancakes to make them unique. This day, I decided to include orange mint and crushed cashews into the batter. I love pecans in my pancakes and waffles but I also love cashews. So, fittingly, I had to give it a go and it is delicious as you would imagine and very light. In the winter, I would say take the fresh peaches and cook them down with a little brown sugar to make a warm compote. In the summer, we like things cool so cold peaches sliced on top with a spray of whipped cream and a sprig of more orange mint for garnish is perfect. I encourage you to experiment and find your favorite mint addition. In the winter, I like adding chocolate mint to my pancakes. You may have never thought of it but mint in pancakes gives an invigorating twist to your morning routine. :-)
